<p>Nutrition is identifying to relate with the process of aging in many ways. Nutrition problems of the older population are increased due to susceptibility to chronic disease, decreased organ function which may affect digestion and absorption, metabolism, and excretion of nutrients. Eighty percent of people over 65 suffer from at least one chronic disease and nutrition is an important factor on there prevention and recuperation from the disease.</p>
<p>Caloric needs change with aging due to a greater percentage of body fat and lower percentage of lean muscle. Decreased activity can cause further decreases in calories. The challenge is to meet the same nutrient needs as when younger but consuming fewer calories. The answer to this is to choose nutrient dense foods. Protein needs are not thought to change for the elderly, although protein requirements may vary due to restrictions or disease.</p>
<p>Here are some tips for healthy eating at home, work, and elsewhere to help you get started. Try some of these ideas.</p>

<li>Start your day off right! , Eat breakfast!</li>
<li>Drink 100% fruit juice (canned, from a carton, or freshly squeezed) with breakfast, or take a can to drink at work.</li>
<li>Spruce up your breakfast—a banana or handful of berries will liven up your cereal, yogurt, waffles, or pancakes.</li>
<li>Take a piece of fruit to munch on during your commute.</li>
</ul>

<h4>The Problem: Not enough fruits &#038; veggies</h4>
<p>Research shows how you eat can affect long term health &#8211; no surprise there. It can make a difference not just in the way you feel every day but can help prevent your DNA from getting worn out! Evidence from epidemiological studies and laboratory studies indicates that dietary factors are important in the causation of cancer at many sites. Extensive studies have concluded that diets high in fat, low in fiber and/or low in fruits and vegetables are associated with an increase incidence of mortality from various cancers.</p>
<p><span id="more-117"></span></p>
<p>Diets with a higher intake of plant foods, especially yellow and green vegetables and citrus fruits is associated with reduced risk of several cancers, notably cancer of the stomach, pancreas, colon, rectum, bladder, endometrial, cervix and ovary. So how is America doing on eating foods to prevent cancer? And what can we do differently to improve our diets.</p>
<ul>
<li>Fewer than 1 in 10 Americans meet fruit or vegetable intake recommendations.</li>
<li>One quarter of all vegetables consumed by children and adolescents are French fries.</li>
<li>Kid&#8217;s intakes of all fruits and of dark green and/or deep yellow vegetables are very low compared with recommendations.</li>
<li>Fewer than 10% of 1- to 2- year-olds consume a dark green vegetable a day &#8216;green foods are important for eye health and often contain folate acid which is good for your heart.</li>
<li>Only one in five children eats five or more servings of fruits and vegetables per day.</li>
<li>Beta-carotene in sweet potatoes, pumpkins and carrots is converted to vitamin A, which helps maintain healthy mucous membranes and healthy eyes.</li>
<li>Scientists have also reported that carotenoid-rich foods can help reduce risk of cancer, heart disease and can improve immune system function.</li>
</ul>

<p>Peppers are growing in popularity nowadays. They are fruits eaten as vegetables.</p>
<p>Peppers can be very flexible in any food combinations, be it barbecues, baking, steaming, stir-frying with any vegetables, nuts, seeds or legumes. They can even be eaten raw as snacks or in salads. It’s no wonder they are the favourites of the vegetarians and vegans.</p>
<p><span id="more-72"></span></p>
<p>They come from the colorful Capsicum family which can be split into two main categories &#8211; sweet bell peppers and the spicy chillies, such as jalapenos. The difference arises from the presence of capsaicin in chillies (which is explained later) but not in sweet bell peppers.</p>
<p>Sweet bell peppers are also known as capsicums, sweet peppers or green/red peppers.</p>
<p>You cannot differentiate the sweet bell peppers varieties when they are still young because they are all green. As they ripen, they will change color. Depending on the stage of ripeness and their variety, their colors range from orange, yellow, red, purple, brown, black, ivory or green and so do their sweetness.</p>
<p>But green bell peppers remain green throughout the ripening process. Thus, it can be challenging to differentiate the other bell peppers from the green variety before they ripen.</p>
<p>All peppers are an excellent source of vitamin C. Green bell peppers contain as much as two times of vitamin C as oranges while red or yellow pepper pack three or four times the daily value of vitamin C.</p>
<p>Besides power-packed with vitamin C, bell peppers also provide vitamin B6, phytochemicals such as lycopene and beta-carotene (the precursor for vitamin A), folate, potassium and plenty of fiber. The only difference between sweet peppers and chilli peppers is the presence of capsaicin in chilli peppers. Capsaicin itself holds numerous health benefits:</p>
<ul>
<li>Effective treatment and natural pain relief for inflammation such as arthritis, psoriasis, diabetic neuropathy.</li>
<li>Reduce risk of heart attack and stroke as it helps to reduce cholesterol levels and formation of blood clots.</li>
<li>Clear blocked nose and congested lungs.</li>
<li>Prevent prostate cancer by inhibiting growth of cancerous cells · Prevent stomach ulcers by killing bacteria in the stomach and stimulate more protective stomach juices.</li>
<li>Help to lose weight as it speeds up the body’s metabolism rate, suppresses appetite and cravings for sweet foods.</li>
<li>Lower risk of Type 2 diabetes by controlling the blood sugar.</li>
</ul>
<p>Capsaicin is what makes the chillies hot as it produces a strong burning sensation in the mouth. The seeds are not the main culprits for causing the hotness. The truth is capsaicin can be found mostly in the white layer which hold the seeds.</p>
<p>Thus, you should be careful when handling the chilli peppers so as not to let them come in contact with your skin or eyes such as rubbing your eyes with your hands after touching the chillies. Wash your hands thoroughly with soap and water after handling the chillies.</p>
<p>Should you eat a really hot chilli which causes an unbearable burning sensation in your mouth, drink milk or eat yogurt, rice or bread instead of water to ease the pain.</p>
<p>Here are a few tips on how to handle the chillies skillfully:</p>
<ul>
<li>Wear gloves.</li>
<li>To remove the seeds without touching them, hold the chilli stem and cut open with a paring knife. Cut away the membranes and seeds with the knife. Using a melon baller can also do the trick. Soak the chillies in water for another 15 minutes before cutting them. Note that this will only reduce but will not fully remove the &quot;hotness&quot; of the chillies.</li>
<li>If you do not need to remove the seeds, just hold the chili by the stem and cut the chillies into rings. Asians like to eat the raw chillies as a dip in this manner, with the chillies soaked in lime juice or soy sauce.</li>
</ul>
<p>Chilli peppers come in different sizes, shapes and degrees of heat or spiciness. The more mature the pepper, the hotter it will be. To measure the heat level in chillies, the Scoville Scale is often used. The Scoville Scale converts the amount of capsaicin in parts per million into Scoville heat units. So the greater the number of Scoville Scale, the hotter the pepper. A sweet bell pepper measures 0 Scoville unit and a habaneros or scotch bonnet, the hottest known chilli peppers, records at around 300,000 units.</p>
<p>Peppers are not seasonal fruits, meaning you can find them in supermarkets any day during the year. Choose well-shaped, firm and glossy peppers which feel heavy for their size. Look out for unhealthy peppers with soft or wrinkled areas, cracks, slashes or black spots. Except for jalapeño which you will see some tiny cracks at the end of their stems, fresh chilli peppers should not have any cracks at all.</p>
<p>It’s best to wrap the peppers in paper bags or paper towels and store in the refrigerator to keep their freshness, up to 5 days for bell peppers and up to 3 weeks for chilli peppers.</p>
<p>Remember to wash the peppers before cooking so as to remove the wax on their surfaces.</p>

<p>Do you remember Beta Carotene? In the 1980’s, no one but doctors and nutritionists had ever heard that beta carotene even existed, until one day when some technician found that the high BC content in carrots does a lot of good for heart patients.</p>
<p><span id="more-64"></span></p>
<p>So in 1992 a major study (18,000 people) was done on the Antioxidant properties of beta carotene by giving it in pill form to cancer patients. It failed miserably.</p>
<p>Researchers are still scratching their heads over why it was such an utter failure, even though beta carotene is a form of Antioxidant.</p>
<p>Vitamin E has a similar story. It too is an Antioxidant; in fact it is the one that the ORAC scale is based upon. Unlike the solid beta carotene pill incident, Vitamin E is in liquid form, so it’s getting fully digested for sure, yet its effects as an antioxidant are pretty nominal.</p>
<p>Aside: It’s a pretty shocking story too&#0133; Two large studies involving more than 127,000 people in total were run in 1990 after Vitamin E was found to help Heart patients. Because of this, by the year 2000 an estimated 23 million US citizens were taking Vitamin E daily&#0133; But in recent years 7 more such studies have been found to show little or no improvement at all!</p>
<p>Anyway, let me lay down one other scenario, a more modern one. You’ve probably heard the French paradox, but if not, here’s a recap:</p>
<p>French people’s diet is the only one higher in saturated fats and cholesterol than the diet of Americans. It’s been well proven. However, with that diet, you might expect for the French to have a higher incident rate of Heart Disease than Americans, but they clearly do not.</p>
<p>Researchers believe that this paradox is caused by the very high amounts of Anthocyanins in red wine, which the French consume way more than the average amount of daily. Anthocyanins, of course, are one of the most potent Antioxidants.</p>
<p>So, what do you think will happen if they pack a pill full of Anthocyanins?</p>
<p>I’d be willing to bet the exact same thing would happen that happened with beta carotene and vitamin E&#0133; Nada.</p>
<p>These examples are hard evidence that Antioxidants must come in natural form in order to be effective free-radical scavengers. It makes perfect sense to me&#0133; What is free-radical scavenging but something acting alive and moving around? If you stop that thing cold in its tracks, like say, compressing it into a cold, lifeless pill, then how is that going to preserve the scavenging property?</p>
<p>So, my overall point here today is to get your Antioxidants from a fibrous form, such as berries or berry pulp. Don’t let it get encapsulated or worse yet, made into a solid pill.</p>
<p>Eating the berries off the tree is the best way to get those free scavengers rampaging of course, but since everyone outside of Amazonia doesn’t have that option, your next best bet is to find it processed with consideration for preserving the fiber. Frozen pulp may be the best way to do that, but it really depends on the processing technique.</p>
<p>As for freeze dried Acai, I don’t claim to have all the answers. It seems like that would stop the scavenging dead in its tracks, but then again, freeze-dried Acai has the highest ORAC rating&#0133; And specifically with MonaVie, their patented process also includes re-mixing their freeze-dried Acai with fresh pulp&#0133; So perhaps that gets both the high ORAC rating and the still-moving scavengers both inside at once. And who knows? Maybe the ones still moving can reanimate the frozen ones!</p>
